Pruning fruit trees while they are dormant has been a long standing method to grow fruit that will be in easier reach when harvesting. Then utilizing designs that increase air circulation and additional sunshine to reach the middle of the tree, as well as minimizing crossing branches that would otherwise rub together, are well-proven techiques that increase yields and promote heathly conditions.
Sure, I also have trees that are not pruned!
During the dormant periods, at least here in a cold climate, rabbits and deer are on the lookout for fresh browse. Fruit tree branch tips and buds area favorites, so I prune and drop the branches on the ground below the trees. Then watch the resulting manure deposits grow.
The trees are loving it!
