Caithriona spent a number of years working freelance advising small Irish development organisations on sustainable business development. This led her into the area of Adult Education and she now spends her time working both on sustainability based projects and teaching Sustainable Horticulture and Entrepreneurship at Westport College of Further Education (WCFE) in Co Mayo.

In 2012 Caithriona co-founded the Edible Landscape Project (ELP), a Westport-based growing initiative which facilitates practical, community workshops where participants learn how, why, where and when to plant local and/or heritage edible fruit and nut trees, shrubs and herbs along parts of the Great Western Greenway in Co. Mayo. The ELP, while not officially certified organic, adopts the ethos of both the organic and agroforestry movements in its planting technique. 

Caithriona holds a BA from University College Dublin (UCD) and a Post-Graduate Diploma in International Business from The Michael Smurfit School of Business also at UCD. In 2014 Caithriona graduated with an MSc. in Organic Farming from the University of Glasgow. Earlier in 2015 she completed a Permaculture Design Course with Geoff Lawton’s Permaculture Institute
